  • Tiny Toms Bruschetta

    Ingredients

    • 1 punnet of FlavourBites Tiny Toms
    • 1 or 2 Flavorite Truss Tomatoes (sliced)
    • 80g marinated goats cheese
    • 1 tbs olive oil
    • ½ tsp salt
    • ½ tsp pepper
    • 2 tsp fresh rosemary leaves, chopped
    • 2 tsp brown sugar
    • 8 thin slices crusty Italian bread
    • Chopped fresh basil or parsley

    Method

    1. Preheat grill to high.
    2. Sprinkle rosemary, brown sugar and 1 tsp of oil over the sliced truss tomatoes and place on baking tray to grill for 15 - 20 minutes.
    3. Remove the tomato slices and rest on the side.
    4. Place bread in a single layer on another large baking tray. Brush both sides with the remaining oil. Grill tor 2 minutes each side or until toasted.
    5. Spread toasts with goat's cheese on the toast and top with the grilled slice truss tomatoes and fresh FlavourBites Tiny Toms.
    6. Serve drizzled with extra oil.
